Ingredients
- 2 cups
brown sugar or Jaggery
- 1 cup
water
- 1 tablespoon
lemon juice or vinegar
- 1 tbsp
ghee
- 4 cups
- ¼ tsp
cardamom powder
- ⅓ cup
cashews, chopped
- ⅓ cup
pistachios, chopped
- ⅓ cup
Raisins
Directions
1. Add the sugar or jaggery, water, and lemon juice to a small saucepan and stir gently to combine. Place over medium-high heat. Allow the mixture to boil undisturbed until it reaches half thread stage (approximately 250°F on a candy thermometer). The syrup should fall from a spoon in a thick thread instead of drops. Stir in the ghee and remove from the heat.
2. Allow the syrup to cool slightly for at least 5 minutes then slowly add the Rice KrispiesⓇ cereal, and cardamom powder, stir gently until the cereal starts to absorb the syrup. It may help to place the saucepan over medium-low heat while stirring. Gently fold in the cashews, pistachios, and raisins.
3. As soon as the mixture is cool enough to handle, but still warm, begin to pack the ladoo into balls using wet hands. Keep a dish of cold water nearby to moisten your hands. Allow the ladoo to cool and set before serving.
